Kadai chicken
I've always enjoyed this dish- the flavour packed chicken, crunchiness of the fried onions and capsicums, the rich gravy just cooked to a delectable texture!
You need half-hr, and cooks for 2-3 persons
Ingredients-
500 gm of curry cut chicken, washed well and marinated for half hour with some red chili powder, turmeric powder, lemon juice and salt
Kadai masala - roasted and grinded coriander seeds ( 2tbsp), full red chili ( 2 nos), few black peppercorns ( 1tsp), fennel seeds ( 1 tbsp)
1 onion cubed
1 capsicum cubed
Cashew paste made with soaked cashews in hot water and then grinded into a paste
2 small onion chopped fine
2 Tomatoes pureed
1 Tsp ginger garlic paste
1/2 tsp of turmeric powder
1/2 tsp garam masala
Salt to taste
Kasuri methi for garnish
Method
Roast and grind the kadai masala ingredients and keep aside
Fry the cubed onions and capsicum and keep aside ( retain the crunchiness)
In a heated pan, add oil, jeera seeds and let it splutter, fry the chopped onions till they brown
Add the chicken along with the kadai masala and let it cook for 5min,
Add the turmeric powder and garam masala and salt
Add the cashew paste, tomato puree and let it fry for 8-10 minutes
Check the consistency of the gravy and add water if required
When the chicken is well cooked, switch off the flame, garnish and enjoy!
It goes well with hot parathas, or rotis. Remember to sprinkle lemon juice on top for more flavour.
Enjoy your cooking!
